the cabins at TH Stone State park are nice but you have to book them early.
we usually rent a house on St. George's Island 1 week a year. The west end of the Island is gated and a great place for a family vacation.
If you want some really good seafood there is a local cafe in Apalachicola a few blocks from the docks. I will ask my wife tonight about it because I can never remember the name.
