The Uintahs on the Wyoming side have some epic dirt roads with lots of little side 4x4 trails. You can really get out there - have your own trout lake if you want. Skyline is a fun day trip in northern Utah. There's a great road up and over mount timpanogus in Provo and Sundance, TONS of roads on the Salisbury range, and lots of fun to be had at and around Smith and More house. Go to B&N or Boarders and pick up one of those state atlas maps. Dirt routes, 4x4 trails, and back-ways are clearly outlined. HAVE FUN... I'm jealous.
