It would "look" good, but after R&R'ing a few of the factory tire mounts, I would encourage one to fab some reinforcement behind the two bolts holding on the stock carrier (just chisel off the capture nuts and use higher grade hardware welded on a reinforcement frame) and really rework the two studs by punching them out and fabbing a subframe with higher grade studs.
Should be pretty simple, the room is there.
My encouragement would be very strong if one has a heavier (oversized) tire mounted back there.
Nice thing about the Taco, I just throw one in the bed when we're ready to head out and take it out when we get home.

I'm not sure many racks could handle it (Gobi maybe?), but for the kind of wheeling I do, I personally wouldn't think of using a rack to mount a gas can.
First off, it is kind of heavy & awkward for many, especially without a 'good' step on the rear. I regulalry maneuver my water up there (1 or 2 5gal. jugs) and it's strenuous and hard to balance. I wouldn't want to drop a gas can.
Secondly, I have always had a fear of it leaking somehow and covering the truck with gas. May sound stupid, but it's just me.
I have had gas cans hanging off the rear of almost every off-road vehicle I've owned, including my '72 FJ40 with the factory rear fuel can mount.
I wouldn't drive around town everyday with it, that's just silly. One is rarely at such risk of running out of gas during one's daily errands that would recquire the need to trade the safety aspect of a protected, secure fuel tank.
However, for trips and wheeling I would definitely hang it on without fear (properly braced/supported as I noted earlier).
I guess if one just wants it for vehicle decoration/adornment, it could simply be hung empty for others to look at...
