You may want to check out this "old" book:
Amazon.com: Nutrition and Athletic Performance: Books: Ellington Darden

Ellington Darden was a body builder, and is a PhD in exercise physiology, as well as doing post doctoral work on nutrition. Old book, good read. Only change is the view on fat since the 70's. The information is incredible, but presentation is pretty bad (no proof reader?)

Never underestimate the Placebo Effect, and supplements bad, real food good.
