Being new to the FJ, these round ups sound awesome and just my type of fun. But how many stock FJ's go to them and how well does the FJ do on these trails in stock configuration. I also have only all season road tires so I would imagine I need to save to get another set for off road. I go in the woods for hunting and fishing etc. But nothing as much fun as seen on this site. Any suggestions?
The stock FJ Cruiser is really capable. In terms of the ride being discused in THIS thread the stock FJ with stock tires (aired down) can complete just about everything Eglin can dish out at it. This is a sand area and big mudder tires actually stink in this stuff.

I believe it is fairly common, at least for rides organized on this site, to cater to a wide range of experience and build levels. There will be things to challenge and build confidence in the newbie with a stock rig, and a few places where the crawler guys will feel a bit more at home (sans actual rock, this IS Florida after all).
