You have 2 good options for the ground
-tap into a factory ground wire
-Better tie into a factory ground point
Page 51 & 52 shows the ground points, the ground point in my pic is behind the switch plate. http://brockandbecca.com/files/fj/FJ_Electrical.pdf
I don't see any need for a protective wire sheath, I don't see the wires being in location where they would get hit by a moving part.
