Ceramic is meant to help keep the heat in the headers, to go out the exhaust as opposed to letting it escape into the engine bay.
I got the ceramic (titanium which is grey just because I am not huge on bling) because I wanted the cooler engine bay temps. Less risk to components as I cram stuff under the hood (battery, circuitry, compressor, etc). Do you really need it? Probably not or JBA wouldn't offer the uncoated headers. They know their stuff.
damn, this is tempting...how tough was the install? Any modification needed?
