Ok sooo, short story long... went to the westex food show, and had this fish I had never had... called Kampachi(not hamachi) its the first WILD farm raised fish. Yep, farmed off the coast of Hawaii, something like 3x's the omega 3's as wild salmon...I tried it sashimi...OMG... this stuff might as well be called butter fish. If you have ever had Toro(tuna belly fat) this is better, sweet buttery goodness... so the short part of the story, I got to work after the show and ordered some... its here this week. Tonight was the first night I ran it and sold almost 10# of the stuff.(thats a freakish amount for my rest.) So come in and have the most amazing fish youve ever eaten. its like 16 bucks and gaurantee you will pay ove 20 any where else for half the portion. Its served with watermellon radis, white aparagus, and a coconut kumquat sauce. BOMB!!!!
