Wing Doors meaning, the small doors for your back passengers. Or if 6.5's can't fit there....How about right behind the wing door on the side of back seat? \
Are there any pictures? I've look in the forums quite a bit to see if 6.5's can fit along the sides somewhere in the backseat.....and can't find any info.

The actual doors are not a good place to mount speakers. Basically, there's no room behind the panel. The space next to the passenger seat is good. A lot of people have mounted speakers there, including me. You should be able to mount most 6 inch speakers there. Measure it...
I've seen some custom installs where they did put components in doors, including 6.5 mid/mid bass. they used the lower comparment, but had to build out for them, meaning they removed the drink cup holder and recessed rear wall/side wall, did a custom panel to cover the entire hole, and then mounted the speaker. there is enough room if you do so, but that is a lot of work, and you better be good with fiberglass and paint to get the new panel looking good.
there are a lot of people who have slid 5.5 and some 6.5 in the area just to the right and left of the rear seats, about chest/shoulder length. do a search and you'll find a lot of photos and install punch lists.
I have MB Quart RCE 213 components in the cut out behind the door. They are mounted coaxially, and sound sweet. In the front I have RCE210's with a 164 Add on MidBass woofer. I feel its a great setup with great sound. I am thinking about adding another pair of MB's on the back pillar along with sub.
I still don't know why people put drivers behind them, especially tweeters, unless they are setting up a 5.1 surround sound system. I guess just to make thier systems louder. If they want to put a mid-bass driver back there for some rear fill, that would be fine, but nothing directional, like tweeters. I tell my customers, save your money and buy some really nice front components. Just my .02
I hear you, but some want some highs that will hit the rear seats without filtering through the front of the vehicle to get back to the rear. Sometimes, it is just a concession to having others who want to listen to music than just the driver and passenger.

With a good set of components and plenty of power, the folks in the back will no issues hearing the music.
Rear passengers is the primary reason I would do it, also for rear fill, in experimenting with just a midbass driver vs full comp set, we found the full set worked better.
Typically we suggest spending 70-80% on fronts speaks and 20-30% on rears.
