Talking 305/70/16's or 295/75/16's vote now

Both sizes are close but which to pick? either will be a mud terrain tire.

I've got 305 MT/R's on OEM steelies and couldn't be happier. They went on the 7-1/2" rims without a hitch (factory specs say 8" minimum). I wouldn't want them any wider.

Anyone experience rubbing on the UCA's with either of these sizes??

Nope. I climbed rocks and ran through washes today, and no rubbing on the UCA's. I'm on stock suspension running 295's.
