I have been extremely pleased with the Cooper STT's. Do yourself a favor, look at the Cooper ST's also to see what works for you. I have a Sun Fusion and mine looks like something bold from Caterpillar! That was my absolute first thought when I went to pick it up at the tire dealer..........."Tractor Tires"!!

Asking what tire is best in here is like asking a guy what his best day ever was......You will get a million different answers ..... It's all in what you want from a tire....Highway....mud...snow...rock...sand....and go from there.
You are limited only in size for an unlifted/stock height truck. Most will tell you that a 285 will fit under your truck but there becomes a distinct chance of rubbing the body mount in the front wheel wells.

Between you me and the wall I would say 265 with your stock steelies will give you the most from your suspension usability. The choice in tire is very much up to you.

With no lift, you're some what limited in your choices. Since this is off road only, I would suggest an aggressive mud terrain. They will be more durable then AT and also will not leave you wondering "what if". I'm assuming you'll be traversing more of the hard pack or rocky stuff instead of sand.
255/85/16 BFG KM2 (tall and skinny)
285/70/16 is probably the biggest you want to go. Even at that size, you may still need bodymount chopped.

Did you mean the KMs, they only make 315/75r16 for the 16" wheels in the KM2 pattern?
The BFG KMs have the 255/85r16s.
