Goulash time

Looks good. Mal (guessing it is a Belgian Mal) protecting the goulash.

I almost dutch ovened a pork butt this weekend, but went with the smoker. 8lb butt currently resting in a cooler.

All the mods and vehicles I have ever owned.

Anything less than absolute overkill is a half assed waste of time.

Wow, that campfire pit is getting big.
The pit is in my backyard and I use to burn wood and leaves there

It is so cool that you'll make a meal outdoors at home.

Re: Let's talk Dutch Ovens!

Found this one and it's done in a skillet but could be done in a Dutch Oven too.

The recipe called for making everything from scratch, but I bought a brownie mix instead. Make sure you get a mix for a 8" x 8" pan and not a 9" x 13" pan. Otherwise you will have too much.

The pumpkin mixture is as follows:

1/2 cup of can pumpkin (not pumpkin pie mix)
4 oz of cream cheese, softened (important)
1 large egg
2 TBS sugar
1/2 tsp ground ginger
1/2 tsp cinnamon
1/2 tsp nutmeg

Mix all those ingredients in a bowl. I can't stress enough the importance of softening the cream cheese. If not softened enough it will pebble up and resemble cottage cheese curds.

Set that aside while you prepare the brownie mix according to the package.

Grease your skillet or DO good. Pour brownie mix in and level out. Next drop clumps of the pumpkin mix in. Use a knife to swirl it and give it that marble look.

Bakes at 350 for about 40 minutes or until the brownie pulls away from the side of the pan and a toothpick comes out of the center clean.

Go ahead, skin it! Skin that smoke wagon and see what happens...

I'll ride in on a sunny day, Sing you a song, steal your heart away Like a cowboy Hang my hat like I'm here for awhile Kick off my boots and drive you wild Like a cowboy Well baby you know I can't stay long You wake up, I'll be gone Until then I'll hold on Like a cowboy.

Re: Let's talk Dutch Ovens!

My experience with the new dutch ovens is not the best. I am not sure what the difference is but if you can search for an old Griswold or Wagner one you will be very happy you made the effort. They are just better. Maybe better cast iron, maybe better long time seasoning makes a difference, but they just are magic.
