Found this one and it's done in a skillet but could be done in a Dutch Oven too.
The recipe called for making everything from scratch, but I bought a brownie mix instead. Make sure you get a mix for a 8" x 8" pan and not a 9" x 13" pan. Otherwise you will have too much.
The pumpkin mixture is as follows:
1/2 cup of can pumpkin (not pumpkin pie mix)
4 oz of cream cheese, softened (important)
1 large egg
2 TBS sugar
1/2 tsp ground ginger
1/2 tsp cinnamon
1/2 tsp nutmeg
Mix all those ingredients in a bowl. I can't stress enough the importance of softening the cream cheese. If not softened enough it will pebble up and resemble cottage cheese curds.
Set that aside while you prepare the brownie mix according to the package.
Grease your skillet or DO good. Pour brownie mix in and level out. Next drop clumps of the pumpkin mix in. Use a knife to swirl it and give it that marble look.
Bakes at 350 for about 40 minutes or until the brownie pulls away from the side of the pan and a toothpick comes out of the center clean.
Go ahead, skin it! Skin that smoke wagon and see what happens...
