This may be hard to find. I'm sure there are competent shops around who can perform the necessary work but keep in mind that most auto repair shops will not install customer provided parts for a few reasons. One being that when the shop orders parts, they lose a little mark up in them which pays for things like overhead. All of those 2 and 4 post lifts, shop equipment, and even the tools they use to set up your ring & pinion have to come from somewhere. Two, when supplying labor to a given customer, generally the shop will warranty the procedure and part(s). If your part fails that you supplied, they most likely won't cover any labor. There are a few other reasons as well but these are the top 2.
I'm sure you can find shops in your area that can do the work. Look for 4x4 shops, drivetrain shops, and maybe even hot rod shops where they have real mechanics that can set them up. You want the dirt under the finger nail type of techs and not the kind you find at the local Meineke. Google "auto repair" for your area and look at the pictures of their businesses. If all you see in the parking lot are BMWs and Mercedes, they probably specialize in european cars etc. A quick phone call can let you in on what they do and how competent they are. Be prepared for a "no" when you tell them that you have your own parts.
