I would start with the thermostat since its the cheapest, but there is a good possibility that the fan clutch is out or the radiator is clogged/packed with mud. The wrong mix of coolant/water shoudn't cause overheating issues if the cooling system is working properly .
 
The BF is going to check the thermostat and drain/refill the radiator for me. My question is why is it only overheating when im sitting? My boss suggested that it may be the water pump?
When your at a complete stop you don't have air pushing through the radiator to keep the coolant temp down. The thermal fan clutch will engage and spin faster at lower RPM's to help keep the engine cool when stopped. keep in mind that the fan will always be spinning even if the fan clutch is bad. If the water pump and thermostat was bad you would think it would also be overheating when you are driving because there is no way for the coolant to cycle through the engine. I would start by power washing the radiator to make sure its not full of mud.
